Makes 12 servings


  • 1 tablespoon Vital Farms Butter
  • 12 Vital Farms PastureRaised Eggs
  • Salt and Pepper to taste
  • 1 red bell pepper diced
  • ¼ cup green onions sliced
  • 1/2 cup cheddar cheese divided


  • Preheat oven to 350°F and grease a 12-cup muffin tin with Vital Farms Butter.
  • In a large bowl, whisk 12 eggs. Season with salt and pepper.
  • Stir in bell pepper, onions, and half the cheddar cheese.
  • Transfer egg mixture to muffin tin and top with remaining cheese.
  • Bake for about 20-25 minutes until egg is completely set.
